Quiche Veggie

Serves: 4       Level: Easy

Cooking Time: 20 min preparation; 40 min baking

Ingredients

  • 1 Puff Pastry
  • 1 Tbsp Olive Oil
  • 1 White Onion
  • 1 Zucchini
  • 1 Tomato
  • 2 Eggs
  • 4 Tbsp Sour Cream
  • Parmesan Cheese
  • Salt & Pepper
  • Herbs (Basil or Celery) Optional

Recipe 

  1. Pour Olive Oil in a stove at medium – high heat.
  2. Finely chop the onion and put it in the stove.
  3. Cut the zucchini and tomato in small dices. Add them in the stove. Add salt, pepper, herbs and stir. Cook for 10 min. Stir from time to time to make sure that the preparation does not stick to the stove. The vegetable’s water should evaporate.
  4. Scramble eggs in a bowl. Add cream. Stir until obtention of a homogeneous texture.
  5. Unroll the puff pastry in a round pie dish and prick with a fork.
  6. Pre-heat oven at 375° F.
  7. Spread vegetables on the dough and cover with the cream / eggs mix. Add cheese.
  8. Bake for 40 minutes at 375° F.

Serve slightly hot (or cold) with a green salad, Arugula was perfect! 🙂
