Chicken Milanese with Spaghetti

Serves: 4          Level: Easy



  • Spaghetti (1 lb), 2/3
  • Garlic Cloves, 2
  • Fresh basil, 1/2 Handful
  • Olive Oil, 1 Tbsp
  • Sugar, 1 tsp
  • Salt and Pepper
  • Parmesan


  • Thawed, Skinless, Boneless, Chicken Breasts, 4
  • Beaten Eggs, 2
  • Italian Breadcrumbs, 1 Cup
  • Flour, 1/2 Cup
  • Olive Oil, 1/2 Cup
  • Salt and Pepper


  1. Boil 6-7 cups of water in stove pot.
  2. Flatten the chicken by placing the pieces on a cutting board, covered with saran wrap (Use meat hammer or palm of hand)
  3. Remove saran wrap and spread flour on each side of chicken breasts. Sprinkle salt and pepper for taste.
  4. Add spaghetti into boiling water. Cook for 6-8 minutes,”Al Dente”. Strain noodles once ready and keep aside.
  5. Beat eggs in one dish and pour breadcrumbs into another dish (see picture).
  6. Place frying pan on stove. Pour olive oil and turn on medium/low heat.
  7. Dip each piece of chicken breast into egg batter and then into the breadcrumbs, making sure that both sides are well saturated each time.
  8. Transfer prepared chicken one by one to frying pan. Cook 5-6 minutes each side at medium heat.
  9. Empty content of tomato sauce into stove pot used for the spaghetti. Turn stovetop on low heat. Add olive oil, sugar, mince garlic, chopped fresh basil, salt and pepper. Stir well.
  10. Add spaghetti. Stir slowly. Allow sauce to simmer for 3-5 minutes.

Add as much Parmesan cheese as you like 🙂
